Peanut Butter Oatmeal

When I was pregnant with our daughter I craved peanut butter all the time. Towards the end of my pregnancy I ended each night with a bowl of Whole Foods brand peanut butter ball cereal with milk (if you have yet to try it, go buy it!). Funny enough, every night before I had the cereal, my daughter would go crazy in my stomach, but after I’d eat it, she’d always calm down and stop moving. This pattern of peanut butter resulting in a calm child indicated I was definitely creating a peanut-butter-loving-monster, and/or a child that freaks out whenever hangry. I’m proud to say she is both.

I recently found out March 1 (yesterday) was going to be National Peanut Butter Lover’s Day, and immediately thought we needed PB in our life to celebrate. I could’ve gone the route of a soft PB cookie, or a toasted PB & J sandwich, but I decided to go with something a little healthier, but also very indulgent – peanut butter oatmeal topped with brown sugar and dark chocolate.

While scarfing it down, I think we both agreed (my daughter in babbles of course) that this oatmeal could easily be devoured for breakfast or when craving a sweet snack. The oatmeal is cooked in a milk and peanut butter mixture, making it extra creamy and thick (none of that watery stuff here). The peanut butter gives the oatmeal a salty flavor and the dark chocolate adds a rich kick. It took about 15 minutes in total to make. I know what I’ll be having for breakfast the rest of my life!

Peanut Butter Oatmeal

Serves 2

Ingredients

  • 2 cups of milk
  • 3 tablespoons of peanut butter
  • 1 cup of old-fashioned oats
  • 1-2 tablespoons of brown sugar
  • 2 tablespoons of chopped dark chocolate

Directions

Heat a medium saucepan over medium-high heat. Add milk and peanut butter and stir until melted and combined. Bring to a boil (keep an eye because milk easily boils over) and add the oats. Cook and stir for about 10 minutes, or until the oats absorb the liquid and oatmeal becomes thick and creamy.

Remove from heat and cool for about five minutes. Top with brown sugar and dark chocolate. Stir to combine and enjoy!
