Carrot cake and I are always good friends this time of year. It’s one of the cakes I truly enjoy, especially with cream cheese frosting. Due to my obsession, I find myself always making some sort of carrot cake dessert Easter weekend, and this year I plan on making carrot cake cupcakes.
I found a really great recipe here that uses crushed pineapple, giving the cupcakes a perfectly soft consistency (sorry, I hate the m*ist word). Just in case you’re wondering, I ended up making a cream cheese frosting – I didn’t add the white chocolate to it in the recipe.
After finding my recipe, it was time to Easter the little cakes up with baking cups or toppers.
I decided to create my own cupcake toppers using ivory circular tags (found at Hobby Lobby), a bunny stamp (also bought at Hobby Lobby), black ink and toothpicks. I made these in about five minutes, so if you’re still in the market for a way to decorate your delicious treat(s) for Easter, this is a perfect last-minute option!
To make the toppers, I stamped the bunny stamp on top of the circular tags. I let them dry about a minute and then using my hot glue gun, glued a toothpick to the back of each tag. That’s it! Told you it was simple.
