Happy Earth Day, peeps!!
This weekend was so beautiful and we were able to snag some time outside with family as we celebrated Easter. My husband and I planted some flowers yesterday and we had our Easter egg hunt outside. Sunshine is SO good for our souls! It’s as if all of our spirits are lifted now that spring is in bloom and the horrid cold days are over.
Because today is Earth Day, I’m hoping to spend time outside with the kids. Maybe a picnic in the backyard, or time at the park? I’m clearly feeling ambitious as I write this at night – ha! We will see where the day takes us, but I do want to make an effort to celebrate the beautiful planet we live on. If all else fails, I know I’ll read Here We Are: Notes for Living on Planet Earth by Oliver Jeffers. We love this book and it’s such a sweet book for the kids to learn more about Earth and the things that live on it.
My husband has been so great about teaching Peyton about our planet and the ways we can help reduce waste and care for the Earth. We also learned a lot about recycling and reducing waste in this month’s Kids Night In Box too, which was so fun! The menu I put together for this month’s box included an avocado toast with edible flowers to represent the vibrant colors of Earth. Below are two versions that both adults and kids can enjoy.

Earth Day Avocado Toast
Ingredients
Floral Avocado Toast (makes two pieces of toast)
- 2 slices of whole grain bread
- 1 avocado
- Garlic salt (regular salt tastes great too!)
- Juice of half a lime
- 1/2 cup of microgreens
- Edible flowers
Blueberry Honey Avocado Toast (makes two pieces of toast)
- 2 slices of whole grain bread
- 1 avocado
- Salt
- Juice and zest of half a lime
- 1/3 cup of blueberries
- 1-2 tablespoons of honey
Directions
To make the floral avocado toast, place two pieces of toast in the toaster or toaster oven and toast for desired amount of time. Slice the avocado in half vertically, remove the pit and peel the skin off of the avocado. Using a knife and cutting board, thinly slice the avocado. Place the avocado on the bread and add a pinch or two of garlic salt, small squeeze of lime, microgreens and edible flowers.
To make the blueberry honey avocado toast, place two pieces of toast in the toaster or toaster oven and toast for desired amount of time. In a small bowl, combine honey and lemon zest. Set aside. Next, slice the avocado in half vertically, remove the pit and using a spoon scoop the avocado out of the skin. Place it in a bowl with a few pinches of salt and lime juice. Stir to combine and add more salt if needed. Place the avocado on the bread and top with blueberries. Drizzle with the honey and lime zest mixture.
