This summer has greeted us with incredible weather so far. We’ve enjoyed being able to eat outside, go to parks and just spend our weekends outdoors. One of my favorite parts about this cool summer weather is being able to keep our windows open throughout the day. There’s something about that summer breeze flowing through our house that just makes me all kinds of happy.
Not only have we enjoyed the temps, but we’ve been relishing all of the grilling, summer food and sweet fruit from our farmer’s market. I can’t wait until the strawberry farm opens for the season. We’re looking forward to picking berries and making some jam and other fun things.
Another fruit we’ve had our fair share of is watermelon. The sweet fruit of the summer. And even though our time eating it ends with many trips to the potty, we just can’t ever seem to get enough. My mother-in-law actually brought over a yellow watermelon the other day and it was the first time our family had ever tried one. It was delicious!
While we normally eat watermelon plain, it’s fun to dress it up too! I recently made this watermelon fruit pizza for Kids Night In’s July box. The team sent me some inspiration from Pinterest and I just loved the concept of using a watermelon as the base of the fruit pizza! Talk about a sweet treat. I think this is such a fun recipe to make with the kids, whether they help you slice the fruit, top the watermelon or just taste test. It’s perfect for this time of year and would be adorable to make on the Fourth of July.

Patriotic Watermelon Fruit Pizza
Makes one watermelon pizza
Ingredients
- 1 small or mini watermelon
- 1/4 cup of marshmallow fluff
- 1/4 cup of whipped cream cheese
- 1/4 cup of sliced strawberries
- 1/4 cup of blueberries
- 1/4 cup of blackberries
Directions
Using a knife and cutting board, cut a thick, circular slice of watermelon. Set aside. To make the fluff topping, place the marshmallow fluff and cream cheese in a small bowl. Use a hand mixer or whisk to fully combine the two. Using a spatula, spread the fluff on top of the watermelon slice.
Top it with fruit and using a knife, cut slices like a pizza. Enjoy!
