Peppermint Popcorn Snowballs

There are few things I enjoy more than bonding over food with my daughter. We’ve had a lot of fun food experiences already – we’ve cheered to cheese cheese sticks, sipped happily on smoothies and enjoyed grilled octopus together at one of my family’s favorite restaurants. And to think she’s only two – I can’t wait for all of the foodie adventures we have to come!

She’s loved food since her days in the womb. I’m not kidding. I was hungry ALL THE TIME!!! It was insane. Because of this, I’m 100 percent positive her food obsession was not forced on her. She truly enjoys it and it’s very cute to see. It’s funny because she always wants to try everything my husband and I are eating, so sometimes we have to sneak into another room if it’s something we don’t want her having in the moment! Trust me, she has her days of refusing to eat what we put on the table – she’s not the perfect eater, but definitely a good and adventurous one.

Before you go thinking I’m crazy for rambling about how my daughter is a foodie for two paragraphs, I swear there’s purpose to my rambling. Because of her love for all things food, I’ve really enjoyed making little eats and treats with her and I wanted to share our most recent creation (inspired by Pinterest) with you – peppermint popcorn snowballs!

Talk about a Frozen fan’s dream treat. I put the popcorn balls together and my daughter helped me with the sprinkles (and eating afterwards of course). This was such an easy and fun treat to make together and it’s the perfect thing to make when you’re stuck indoors with the kids.

Peppermint Popcorn Snowballs

Makes about six popcorn balls

Ingredients

  • 1/4 cup of popcorn kernels
  • 1 tablespoon of olive oil
  • Salt
  • 3 tablespoons of butter
  • 3 cups of mini marshmallows
  • 1 cup of turquoise candy melts (can use white chocolate baking chips as well, but don’t add food coloring to the chocolate because it will harden)
  • 1/2 cup of milk chocolate baking chips
  • 1/4 cup of festive sprinkles

Directions

Heat a large pot over medium-high heat. Add the kernels and olive oil and cover with a lid. Using oven mitts, grab the handles of the pot and shake every so often until the kernels start to pop. Remove from the heat when the kernels are done popping and sprinkle with a pinch of salt.

In a separate large pot, melt the butter over medium-high heat. When the butter is melted and starts to sizzle, add marshmallows and stir until completely melted. Remove from the heat

Add the popcorn and mix to combine.

To form the popcorn balls, lay a sheet of parchment paper down and spray your hands with cooking spray. Form little balls with your hands and place them on parchment paper to harden slightly.

While the popcorn balls are sitting, place the peppermint candy in a blender or food processor and blend it until it’s finely crushed. Set aside. Melt both the turquoise candy melts and milk chocolate in the microwave in 30-second intervals, stirring in between and heating until melted. Once the candy is melted, mix the crushed peppermint in the turquoise chocolate and drizzle the mixture over the popcorn. Next, drizzle with the melted milk chocolate. Finally, sprinkle the popcorn with the sprinkles provided in your box.
