Parmesan & Thyme Popcorn

Today marks my 28th year on earth!!!

But how can I be 28 when I still feel (and look most of the time) 16? I’m not sure, but last night, we sang “happy birthday” and I had two babies on my lap and my husband lighting candles and my heart couldn’t be more full.

My parents actually joke that I used to celebrate my birthday all week, but nowadays, I keep the celebration to one or two nights. 🙂 The truth is, I do love celebrating my birthday, and I especially enjoy it now that I’m a mom. For starters, it gives me a reason to shower and makes for a great excuse to relax for they day. And while it’s nice being loved on by my family, I’m at the stage in my life where I enjoy celebrating their birthdays more. It’s so much fun making their birthdays special.

Anyway, I’m going to keep this post short and sweet because I’m the birthday girl and I can (haha!), but before I go, here’s a savory spin on my favorite snack – popcorn! It’s drizzled with parmesan, thyme and melted butter. Yum, right? I have it at least 2-3 nights a week, so I like to shake it up and add different flavors every now and then. Recipe is below!

Parmesan & Thyme Popcorn

Ingredients

  • 1/3 cup of yellow or white popcorn kernels
  • 1 tablespoon of oil
  • 2 tablespoons of butter, melted
  • 1 tablespoon of fresh thyme (sprigs removed)
  • 1/4 teaspoon of salt
  • 1/2 cup of grated parmesan cheese

Directions

Set a large pan over medium heat. Add the kernels and olive oil and cover the pan with a lid. Shake the pan to move the kernels around every minute or so until the kernels start to pop (should take about 3-5 minutes).

While the kernels are popping, add the thyme to the melted butter and set aside. When the kernels have finished popping, drizzle with the melted butter and stir. Sprinkle with half of the salt and parmesan cheese, mixing while sprinkling. Serve immediately.
